Carecci & Figli Trading (pronounced as kar-reh-chee & fee-lee) was established in 1990 with the initial role of the production of pastas and sauces due to the tremendous growth and demands of Pasta Fresca restaurants. Carecci & Figli has developed a winning formula that allows it to produce a high volume of fresh pastas, sauces and other ingredients for all of our restaurants. Over the years, it has diversified laterally and now networks with Italian companies to import and produce a range of high quality gourmet products for retail and online purchase. Our premium products have also made their way to other independent restaurants, hotels, supermarkets and airline catering companies.
|Burrata Cheese||Prosciutto Di Parma (Parma Ham)
Classic fresh cheese from Italy, with a soft creamy centre. Burrata means “buttered” in Italian. Rich and velvety, the burrata consist of an outer shell of silky and supple mozzarella made from the finest buffalo milk using a technique known as the pasta filata or “stretched curd” method. Shaped like a pouch, the shell oozes a delectable creamy mixture of thin strips of mozzarella and cream.
Milky with a hint of delicate sweetness, the burrata is best eaten fresh with salads, parma ham, tomatoes, bruschetta, crackers or on its own with just a dash of olive oil. Carecci only imports burrata from the finest Italian farms with stringent production methods.
Paper thin sliced, moist and rosepink with a creamy white skirt and a good aftertaste makes the perfect parma ham. Smooth and moist with a subtle sweetness, parma ham is to be enjoyed uncooked with grissini, melon, salads or topped on cooked pasta or pizza. The parma ham is referred to as one of the world’s finest gourmet treats.
The long and delicate process of dry salting and air drying for more than a year also involves a governing body that protects its culinary heritage. The parma ham consortium ensures production is carried in accordance to safe traditional methods. This is also a compulsory requirement for all parma ham imported by Carecci.
Pronounced "knee-o-key”. A fresh type of fresh pasta made from semolina, potatoes and eggs and usually prepared mixed in a sauce or sauteed with just butter and herbs. The gnocchi is a thick and soft dough that tastes light and fluffy when cooked and very much enjoyed due to its ability to absorb and compliment flavours from accompanying ingredients.
Made daily in Carecci’s owned factory in Singapore, it is guaranteed to be delivered to you fresh. A best seller pasta, gnocchi is favoured by many chefs and F&B establishments.
